4 squares milk chocolate
1 graham cracker
1 marshmallow

Toast marshmallow slowly over campfire coals until brown (avoid allowing marshmallow to ignite). Break graham cracker in half and put chocolate on one half, then place toasted marshmallow on chocolate, top with other half of graham cracker and hold firmly while you pull out your marshmallow roasting stick. Let your new s'more rest until the chocolate is partially melted; enjoy and repeat!

3 cups flour
1 tsp baking powder
80g butter
1 cup cold milk
pinch salt

Combine flour, baking powder and salt. Cut butter (using two butter knives or your fingers) into dry mixture until you achieve a breadcrumb texture. Make a well and add milk. Mix until the dough comes clean from the sides of the bowl. Shape into a nice round loaf.

Place loaf, wrapped in aluminium foil or in a dutch oven, in a shallow in well dug into the established coals of your campfire.

Check after 15 - 20 minutes and every 5 minutes thereafter until done. The loaf should be a light golden brown colour and sound hollow when tapped.

Eat with soup, stew, or on it's own with jam & butter.

Salmon en Papillote

1 salmon filet per person
fresh lemon
fresh herb(s)
butter
salt
pepper

Make a compound butter by letting the butter soften and then mixing it with the finely chopped herbs (dill and cilantro are equally delicious options), lemon juice and lemon pulp. Slather each filet with a generous portion of the herbed compound butter and wrap each separately in its own foil 'envelope' (double fold edges to make sure the fish stays moist). Put foil envelopes on the grill and let fish cook on the bbq grate over a medium heat for about 10 minutes. Serve with foil wrapped campfire baked potatoes and grilled veggies.
